Mashed Potatoes with Black Truffle

A well-made potato purée is one of the most comforting expressions of French cooking: warm, smooth and generous, with just enough butter and cream to create a velvety texture. It is a versatile accompaniment for a family meal or a more celebratory table, especially when finished with an exceptional aromatic ingredient.

This mashed potato purée combines tender Bintje or Agria potatoes with butter, warm cream and Plantin Black Winter Truffle. Fresh truffle brings an intense, earthy aroma and can be shaved over the finished purée, while Plantin Black Winter Truffle Breakings offer a practical alternative when fresh truffle is out of season.

Mashed Potatoes with Black Truffle

Ingredients

    Potatoes and base

    • 800 g Bintje or Agria potatoes, washed
    • Coarse salt, for the cooking water
    • 40 g unsalted butter
    • 50 ml full-fat cream

    Truffled finish

    • 20 g fresh Plantin Black Winter Truffle, if in season
    • or 25 g Plantin Black Winter Truffle Breakings, drained
    • Fine sea salt, to taste
    • Freshly ground black pepper, to taste

    Directions

    1. Cook the potatoes:
Start cooking the potatoes by submerging them whole in cold, salted water. This gradual boiling ensures a uniform texture and prevents the outside from falling apart before the center is tender. Allow approximately 20 to 25 minutes, depending on their size. Gentle cooking is essential for creating the perfect base for your mashed potatoes with fresh or preserved black truffle .

    2. Peel and mash:
Drain the potatoes and peel them while still warm. Pass them through a potato ricer or food mill directly into a warm saucepan. For a more rustic texture, mash gently by hand instead. Avoid using a blender, food processor or electric mixer, which can make the potatoes gluey.

    3. Add the butter and cream:
Add the butter in pieces, then the warm cream. Mix gently to maintain the texture of the mash. The butter adds a rich, indulgent quality, while the cream enhances the smooth texture. This balance of fats is essential to bring out the aromas without masking the delicate flavor of the black truffle.

    4. Finish with black truffle:
Remove from the heat and gently fold in the fresh black truffle or truffle breakings. If using fresh truffle, reserve a few thin shavings to finish each serving. Season with fine sea salt and freshly ground black pepper to taste.
