Solar Amber: Toasted Sesame and Vanilla Chardonnay Mocktail

Two tall ice-filled highball glasses of pale amber sparkling mocktail with a toasted sesame and honey rim, fine bubbles and a subtle vanilla-speckled finish, styled on a refined table with lemon and toasted sesame nearby.

A well-balanced mocktail can explore the same depth and contrast as a cocktail, combining sweetness, acidity, aroma and texture in a single glass. With toasted sesame, fresh vanilla and bright lemon, this alcohol-free aperitif offers a more savoury, layered take on a sparkling drink for a dinner gathering or a celebratory toast.

Solar Amber combines toasted sesame and vanilla syrup with fresh lemon juice, a touch of saline solution and Alain Milliat Chardonnay Sparkling Grape Juice. The sesame brings a warm nutty note, while vanilla softens the lemon’s brightness and the sparkling grape juice gives the drink a lively, elegant finish. Sesame is often used in drinks to add a nutty flavour and rounder mouthfeel; the drink should be topped with its sparkling element only after the shaken base is strained to preserve carbonation.
