About this product

Joues de bœuf: a hard-working muscle, dense with connective tissue, and completely wasted on anything quick. Give it three hours in red wine and it collapses gently into itself and thickens the sauce as it goes. The classic daube cut, and still one of the most rewarding ways to eat very well.
