About this product

Grey mullet roe from Greece, salted, cured, air-dried and then ground to a fine powder the colour of dark honey. Heat flattens it, so hold it back until the very last moment: a pinch over hot pasta, through a seafood risotto, or across soft scrambled eggs. Deeply savoury, and a very small jar goes a long way.
