About this product

Farmed sustainably in Croatia, this is a firm white fish with the texture of sea bass and a gentle sweetness all of its own. The fillets are thick enough through the shoulder to take a proper hard sear on the skin without the flesh going past translucent. Lemon, olive oil, and very little else.

Storage & serving

Storage: Keep frozen. Defrost in the fridge for 24 hours before cooking, or in cold water for about 1.5 hours
Serving Recommendation: Pan-sear skin-side down 4-5 minutes, then 1 minute on the flesh.
Serving size: 150 to 180g per person
