Guijuelo, Spain

Conservation : 

keep in a cool and dry place. The ham is vacuum packed. 

Once you started slicing the ham, the best way to preserve it until next use is to keep the piece of fat you have cut when "opening" the ham, and put it on top of the sliced area before covering the whole piece of ham with plastic film.

Once open, the ham needs to be consumed the soonest as humidity and high temperature will alternate its quality.
