Red Label free-range chicken from Burgundy, raised slowly on cereals, which is where the golden skin and yellow fat come from. Held frozen and supplied oven-ready. Worth keeping one in for the Sunday you had not planned: it roasts beautifully and the carcass makes a stock worth the trouble.

Storage: Keep frozen
