Smaller than salmon roe and altogether gentler: deep red, glossy, and they pop rather than burst. Two ingredients, roe and salt, and nothing standing between you and the flavour. On a blini with a spoonful of crème fraîche, or stirred through a chilled asparagus soup at the last second so the colour holds.
