About this product

Wild Patagonian toothfish from the Kerguelen Islands, better known on menus as Chilean sea bass. Rich, buttery and almost sweet, with a large snow-white flake that holds together under almost any treatment. Roast it, poach it, glaze it with miso; it is remarkably difficult to ruin and quite something when it goes right.

Origin: Kerguelen Islands, French Southern and Antarctic Lands

Delivered by our own team under full cold chain. Packed with ice packs, can be left at your door, and we send your delivery window the day before.

Storage & serving

Storage: Keep frozen. Defrost in the fridge for 24 hours before cooking, or in cold water for about 1.5 hours
Serving Recommendation: Roast at 180°C for 12-15 minutes, or poach gently.
Serving size: 150 to 180g per person
