Raclette selected by Xavier and supplied as a whole piece rather than sliced, so you can cut it to the thickness your machine likes. It melts evenly and smoothly, and its savoury, nutty flavour comes forward as it warms. Scrape it over boiled potatoes and serve with cornichons, pickled onions and charcuterie.
