Capon Roll - Pre-Cooked

What is Capon Roll? The capon is deboned then rolled with skin-on, seasoned with salt, berries blend and Espelette pepper, and wrapped with kitchen twine before being vacuum-packed for pre-cooking at low temperature (to preserve a tender flesh).
How to prepare it? Remove the packaging and place the Capon Roll (with the kitchen twine still on) in an oven-friendly container. Make sure to save all the cooking juice by adding some water into the empty packaging, shake it and pour it into the container as well. Cook in the oven for 45 minutes at 150°C.
How to serve it? Remove the kitchen twine and cut the capon roll into slices. Pour the cooking juice on the slices. For side dish, mashed potatoes (or celery!) or roasted veggies. Special note : if you have leftovers, you may serve it cold the next day as appetizer or starter.
Serving : 5 to 6 people (150g - 200g per person recommended)
