What is Bottarga : cured fish roes, from Mulet Lippu fish. Ancestral way of preservation, the process consists in salting, pressing, and air-drying the roes for several weeks before coating them in natural beeswax. 

How to use Bottarga : thinly sliced or grated on cold and hot dishes : 

- With bread and olive oil, butter or lemon juice ; as a topping on raw vegetables

- As a topping on scrambled eggs, pasta or risotto.
